Greenhouse-dried flowers (Greenhouse drying)
The butterfly pea flowers (Clitoria ternatea), known for their natural deep blue color and their traditional uses in Southeast Asia, are now highly sought after in gastronomy, mixology, and creative infusions.
At Kawanga, we’ve chosen a unique quality, derived from flowers harvested at full maturity and then dried in a greenhouse (greenhouse drying). This process allows for precise control of temperature and humidity, preserving the color, the structure of the petals, and the natural compounds responsible for their exceptional pigmentation.
Butterfly pea flowers are prized above all for their puissance visuelle, tout en restant discrètes sur le plan gustatif.
