In the heart of the West Java highlands, Tilu coffee grows on the lush, green slopes of Gunung Tilu. Here, the volcanic soil, nourished by mist and light rain, produces a coffee of exceptional purity. Nestled between dense forests and terraced rice fields, Sundanese villages live in harmony with the morning mist and the mountain winds. Sundanese culture\u2014discreet, respectful, and patient\u2014stands in contrast to the more tempered vigor of Central Java. It shapes a coffee full of nuance: calm, balanced, and elegant, just like those who cultivate it.<\/p>\n<\/div>\n

The Full Wash Process<\/b><\/p>\n

Le proc\u00e9d\u00e9 Full Wash r\u00e9v\u00e8le la clart\u00e9 et la finesse du terroir. Les cerises, r\u00e9colt\u00e9es \u00e0 la main \u00e0 parfaite maturit\u00e9, sont d\u00e9pulp\u00e9es puis plac\u00e9es en fermentation humide pendant pr\u00e8s de deux jours. Sous l\u2019eau de source fra\u00eeche, le mucilage se d\u00e9tache peu \u00e0 peu, laissant le grain net et soyeux.
\nLes grains sont ensuite lav\u00e9s \u00e0 l\u2019eau claire, puis s\u00e9ch\u00e9s sur des lits sur\u00e9lev\u00e9s en bambou durant une douzaine de jours. Chaque lot est retourn\u00e9 plusieurs fois par jour : un travail lent et pr\u00e9cis, guid\u00e9 par le regard du producteur et la sensation au toucher. Lorsque la texture devient satin\u00e9e et l\u2019humidit\u00e9 \u00e9quilibr\u00e9e, le caf\u00e9 est pr\u00eat \u00e0 \u00eatre tri\u00e9 et affin\u00e9.<\/p>\n<\/div>\n
